It’s officially Spring! According to my brand-new still-straggly editorial calendar, this is the perfect post because the Spring equinox is today. Except it was actually Monday. Dang.
“Spring” in Florida, especially Central Florida (where I live) or lower, is a bit of an odd concept, since we don’t have much of a Winter. It’s normal for us to boomerang between short periods with highs in the 50’s and the 80’s.
This year, it got warm in February, then blasted us with a cold long weekend just as we’d forgotten about winter. Thank goodness that the mood-swing weather doesn’t prevent us from cooking like it’s Spring.
Below are dozens of Spring-suitable recipes. Some are lighter, some are less so, but they all feature delicious seasonal veggies, fruit, or herbs (mmm, herbs. If it stays alive, I’ll tell you all about my oregano plant). Some of these recipes are mine, but most are from other food bloggers I deeply admire.
