Vegetable oil
1 medium onion
1/2 teaspoon kosher salt
1/2 teaspoon brown sugar
1 tablespoon balsamic vinegar
2 tablespoons water
Bacon Onion Dip
8 ounces low fat cream cheese, room temperature
1/4 cup low fat sour cream
1/4 cup whole milk
1/4 shredded Gruyere cheese + extra for topping
1/2 teaspoon mustard powder
1/4 teaspoon cayenne pepper
1/4 teaspoon kosher salt
1/4 teaspoon Worcestershire sauce
1/3 cup caramelized onions
1/2 pound bacon, cooked and crumbled
Chopped chives
Instructions
Caramelized Onions
Heat oil in a large pan over medium, then add onions and salt. Cook until softened, about 5 minutes, stirring often.
Add vinegar, sugar, and water and reduce heat slightly. Cover and cook, stirring often, until the liquid is absorbed and the onions are brown and have started to break down, about 30 minutes.
Set aside to cool.
Bacon Dip
Preheat the oven to 350F.
Beat cream cheese until fluffy.
Add sour cream, Gruyere, milk, mustard, cayenne, and Worcestershire, and continue to beat until smooth.
Stir in onion jam and bacon.
Spoon into a baking dish. Top with reserved Gruyere.
Bake 8-10 minutes, or until dip begins to bubble and the cheese browns.
Garnish with chives and serve with toast, crackers, or veggies.
