Slow Cooker Corned Beef

Ingredients

  • 1 (3-4 pound) corned beef brisket, plus pickling spice packet
  • Optional: 1 rutabaga, peeled and quartered
  • 4 carrots, peeled and roughly chopped
  • 1 pound red potatoes, quartered
  • 3 onions, peeled and quartered
  • 2 celery stalks
  • 4 cloves garlic, peeled
  • 2 bay leaves
  • 12 ounces beer
  • 48 cups water
  • 1/2 head of cabbage, cored and cut into wedges

Instructions

  1. Into the slow cooker, layer in rutabaga, carrots, potatoes, onions, and celery.
  2. Place corned beef on top, fat side up, and sprinkle with spice packet.
  3. Add beer and enough water to cover beef, plus garlic and bay leaves.
  4. Cook on low for 7 hours. Add cabbage; cook for 1 more hour.
  5. Slice corned beef against the grain. Serve with vegetables, cooking liquid, grainy mustard, and Irish soda bread if you’re lucky enough to have it.
