Ingredients
- 1/2 cup olive oil
- 2 tablespoons white wine vinegar
- Juice of 1 lime (about 2 tablespoons)
- 1 1/2 teaspoon salt
- 1 teaspoon sugar
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1/2 tsp garlic powder
- 1 pound Roma tomatoes, seeded and diced
- 1 (15 ounce) can black-eyed peas, drained and rinsed
- 1 (15 ounce) can black beans, drained and rinsed
- 1 cup fresh or frozen corn
- 1 medium red onion, diced
- 1 bell pepper, diced
- 1 jalapeno, seeded and minced
- 1 cup chopped cilantro (about 1 bunch)
- 2 avocados
Instructions
- Combine all ingredients except avocado and mix well. Chill at least 1 hour.
- Just before serving, dice avocados and add to bowl. Toss well and serve with tortilla chips.
